What is Gluten?

What is gluten? Gluten is a protein found in barley, rye and wheat products. Most people may be surprised to learn that gluten can also be found in many other everyday products, such as frozen vegetables, soy sauce, medications, and salad dressings. People with Celiac disease need to follow a gluten-free diet because their body cannot tolerate the protein in even small amounts. Many other people benefit from omitting gluten from their diet because of mild intolerance, which can cause the immune system to attack the body. Gluten intolerance can be very uncomfortable, with symptoms include digestive issues, headache and fatigue.
